Recipe of the Week - November 27, 2013

 

Pecan Pie Bars

 

Serve with vanilla ice cream for an over-the-top dessert.

 

1 package (18 oz) yellow cake mix

1 egg

1 ½ cups corn syrup

1 teaspoon vanilla

1 cup chopped pecans

½ c margarine, melted

1 teaspoon vanilla

½ cup brown sugar

3 eggs

 

 

1. Set aside 2/3 cup cake mix.

2. Mix remaining cake mix, margarine, 1 egg and 1 tsp vanilla. Press evenly in bottom and sides of a 9x13 inch greased pan.

3. Bake at 350°F for 15 to 20 minutes.

4. Combine rest of cake mix, corn syrup, brown sugar, vanilla and eggs. Pour over the baked crust.

5. Sprinkle with chopped pecans and return to oven to bake for 30 to 35 minutes or until filling is set.

6. Cool and cut into bars.
